Their Nihachi Soba noodles are made from buckwheat harvested in the Torigoe area and grounded in a stone mill in the restaurant!
They use natural water from the Kodatsuno Plateau (Hyakunensui).
Handmade local soba powder and Hyakunensui water are the essential elements in these special soba noodles.
