[Tsubajin Ryotei] Start Your Kanazawa Morning with a Luxurious “Kani-kayu”(Crab Rice Porridge)

Tsubajin, a long-established ryotei from the Kaga Hyakumangoku era, has shared Kanazawa’s culture and cuisine for over 350 years. In July 2025, we will launch a breakfast service filled with Tsubajin’s omotenashi.

Please enjoy a special morning moment in a space overlooking the beautiful streets of Kanazawa from Teramachi-dai, praised by Japan’s first Prime Minister, Hirobumi Ito, who said, “Not only the cuisine and setting, but also the wind, light, and scenery make this establishment the finest in Kanazawa.”

Our blissful breakfast featuring “Crab Rice Porridge” begins with a visually stunning tray. Each dish, including the dashimaki tamago (Japanese rolled omelet) served with fragrant sea lettuce sauce, moist duck roast, homemade tofu, and special salted koji, is crafted with the utmost skill and heart by our artisans. The star of the meal is the fluffy and aromatic “Crab Rice Porridge,” a supreme bowl that captures the seasonal crab’s rich flavor — truly a masterpiece unique to a long-established ryotei. The heirloom tableware and meticulous arrangements passed down through generations further enhance the taste and hospitality of the meal.
