We wanted vegan and vegetarian guests to enjoy our ramen, so we developed a miso ramen made without any meat, fish, or eggs!
It features a soy milk–based broth and egg-free noodles.

Although it’s incredibly rich, it’s surprisingly light and easy to enjoy.
We use local Kaga miso, giving the ramen a distinctive local flavor.
It’s perfect not only for dinner, but also as a satisfying late-night bowl!

Our soy sauce ramen made with Ono soy sauce is also highly recommended.
