Different cuts of beef, pork, and chicken from various parts of Japan are served with homemade sauces, dressings, and other condiments made with Noto salt, local Ono soy sauce, miso, and so on. The vegetables served here are seasonal Kaga vegetables and organic vegetables from contracted farmers in Suzu, Noto.
